Peanut Butter + Dark Chocolate Cups!

I've always wanted to try this recipe! (*** Versão em Português no final do Post ! )

It is a big punch of energy and a very happy guilty free treat for you that can't stay away from sugar like me !

This is a great option after your workout, and an awesome snack for the Kids!... or even to snack in between a long day of work to pump up your energy levels in a positive healthy way !!!

Peanut butter has protein as well as potassium - which lowers the risk of high blood pressure, stroke and heart disease... It also contains Vitamin E and antioxidants !

These are easy and Fast to make !

This is my take on a recipe that I found online it is usually made without the chocolate and cocoa instead but I wanted to get it as chocolaty as possible ...

It took me about 30min. This recipe makes 12 cups!

Bottom Layer :
-4 tbs virgin coconut oil
-1 cup smooth or crunchy Natural peanut butter
-1/4 cup chopped dark chocolate
-1 tbs honey

*12 cupcake baking cups

Top Layer :
-3 tbs virgin coconut oil
- 1 cup smooth peanut butter
- 1 tsp vanilla extract
- 1 tbs honey
- unsweetened coconut ( optional ) !

Instructions:

* Get the tray ready with the cupcake baking cups

add the coconut oil, peanut butter and dark chocolate to a pan, melt the ingredients in medium heat

*that will be a fast process so keep stirring !

add the honey and stir until you get a nice smooth consistency

pour into the cups evenly and put it in the freezer in a flat surface for about 10minutes .

Meanwhile do the same process with the coconut oil and peanut butter in the pan until it gets smooth, add the vanilla and honey mix it and pour on top of the chocolate mixture.

Make sure the bottom part is set !
sprinkle coconut on top if wished.

Put it back in the freezer for about 20 minutes to make sure that it is nice and set!

Store it in the freezer!

Enjoy !!!!
